Chia Coconut Bars

Ingredients

  • 4 tbsp (48 g) chia seeds
  • 1 cup (240 ml) water
  • 1 cup (80 g) shredded coconut
  • 1 tbsp (14 g) coconut oil
  • ¼ tsp (1 g) vanilla extract (optional)
  • ½ cup (69 g) raw cashews

Method

  1. Soak Chia Seeds:
    Mix chia seeds with ½ cup (120 ml) water. Soak for 15 minutes until gelatinous.

  2. Preheat Oven:
    Heat oven to 175°C.

  3. Combine Ingredients:
    In a bowl, mix the soaked chia seeds with shredded coconut, coconut oil, and vanilla extract (if using). Stir or knead until well combined. Add raw cashews and mix thoroughly.

  4. Prepare Pan:
    Line a 23 cm x 23 cm baking pan with parchment paper. Flatten the mixture evenly in the pan to about 2 cm thick.

  5. Bake:
    Bake for 45 minutes or until the edges are golden and the centre is dry (check with a toothpick).

  6. Cool & Serve:
    Let cool in the pan, then remove and cut into 6 bars or 9 squares. Enjoy your clean, naturally sweet snack!
