Ingredients
- 4 tbsp (48 g) chia seeds
- 1 cup (240 ml) water
- 1 cup (80 g) shredded coconut
- 1 tbsp (14 g) coconut oil
- ¼ tsp (1 g) vanilla extract (optional)
- ½ cup (69 g) raw cashews

Soak Chia Seeds:
Mix chia seeds with ½ cup (120 ml) water. Soak for 15 minutes until gelatinous. -
Preheat Oven:
Heat oven to 175°C. -
Combine Ingredients:
In a bowl, mix the soaked chia seeds with shredded coconut, coconut oil, and vanilla extract (if using). Stir or knead until well combined. Add raw cashews and mix thoroughly. -
Prepare Pan:
Line a 23 cm x 23 cm baking pan with parchment paper. Flatten the mixture evenly in the pan to about 2 cm thick. -
Bake:
Bake for 45 minutes or until the edges are golden and the centre is dry (check with a toothpick). -
Cool & Serve:
Let cool in the pan, then remove and cut into 6 bars or 9 squares. Enjoy your clean, naturally sweet snack!
