Healthy Sausage Rolls Recipe
Ingredients:
• 500g lamb mince
• 1 small zucchini, grated (excess moisture squeezed out)
• 1 small carrot, grated
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1/4 cup oats or almond meal (for binding)
• 1 large egg, lightly beaten (reserve a little for brushing the pastry)
• 1 teaspoon liver powder
• 1 tablespoon fresh herbs of choice
• Salt and pepper to taste
• 2 sheets of puff pastry
Instructions:
1. Prepare the Filling:
• In a large mixing bowl, combine the ground meat, grated zucchini, grated carrot, onion, garlic, oats or almond meal, egg, parsley, and any other herbs.
• Season with salt and pepper and mix until well combined.
2. Assemble the Rolls:
• Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
• Lay the puff pastry sheets on a flat surface and cut each sheet in half to form two long rectangles.
• Divide the filling mixture into four portions and shape each into a log, placing one along the center of each rectangle.
• Fold the pastry over the filling and press to seal the edges. You can use a fork to crimp the edges if desired.
3. Brush and Slice:
• Place the rolls on the prepared baking sheet, seam-side down.
• Lightly brush the tops with the reserved beaten egg for a golden finish.
• Slice each roll into smaller portions (3-4 pieces per roll, or keep them longer if preferred).
4. Bake:
• Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and the filling is cooked through.
5. Serve:
• Enjoy warm with a side of your favorite dipping sauce or a fresh salad.
Tips:
• For an extra veggie boost, you can add a handful of chopped spinach or kale to the filling.
• These can be frozen before baking for meal prep. Just bake straight from the freezer, adding a few extra minutes to the baking time.
