Founder's Favourite Lunch Box Sausage Rolls

Healthy Sausage Rolls Recipe

Ingredients:

500g lamb mince

1 small zucchini, grated (excess moisture squeezed out)

1 small carrot, grated

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup oats or almond meal (for binding)

1 large egg, lightly beaten (reserve a little for brushing the pastry)

1 teaspoon liver powder

1 tablespoon fresh herbs of choice

Salt and pepper to taste

2 sheets of puff pastry 

 

Instructions:

1. Prepare the Filling:

In a large mixing bowl, combine the ground meat, grated zucchini, grated carrot, onion, garlic, oats or almond meal, egg, parsley, and any other herbs.

Season with salt and pepper and mix until well combined.

2. Assemble the Rolls:

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Lay the puff pastry sheets on a flat surface and cut each sheet in half to form two long rectangles.

Divide the filling mixture into four portions and shape each into a log, placing one along the center of each rectangle.

Fold the pastry over the filling and press to seal the edges. You can use a fork to crimp the edges if desired.

3. Brush and Slice:

Place the rolls on the prepared baking sheet, seam-side down.

Lightly brush the tops with the reserved beaten egg for a golden finish.

Slice each roll into smaller portions (3-4 pieces per roll, or keep them longer if preferred).

4. Bake:

Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and the filling is cooked through.

5. Serve:

Enjoy warm with a side of your favorite dipping sauce or a fresh salad.

 

Tips:

For an extra veggie boost, you can add a handful of chopped spinach or kale to the filling.

These can be frozen before baking for meal prep. Just bake straight from the freezer, adding a few extra minutes to the baking time.
