Fudgy Cassava Brownies

Dense, rich & irresistibly chewy!

Ingredients:

  • 1 ¼ cups cassava flour (Use AKN brand; if using Otto’s, halve the amount!)
  • 1 cup water
  • ½ cup coconut oil or ghee
  • 4 tbsp cacao powder
  • 4-5 tbsp natural sweetener (Lakanto, coconut sugar, rapadura sugar, stevia, or maple syrup)
  • 2 tsp vanilla extract
  • ½ tsp baking soda
  • Optional: ½ cup collagen powder

Method:

  1. Preheat oven to 180°C and line a loaf tin with baking paper.
  2. Combine all ingredients in a blender or mixing bowl until smooth.
  3. Pour batter into the tin, spreading evenly.
  4. Bake for 15-20 minutes, then let cool slightly before serving.
  5. These brownies will be ultra-chewy when warm but firm up into a fudgy texture as they set.



Hidden Veggie Sausage Rolls

A family favourite with extra hidden goodness!

Ingredients:

  • 250g pork mince
  • 250g beef mince
  • 1 small onion, finely diced (optional)
  • 1 clove garlic, minced (optional)
  • 1 zucchini, grated
  • 1 carrot, grated
  • ½ cup finely chopped broccoli stems
  • 1 tbsp tomato sauce
  • 1 handful fresh sourdough breadcrumbs
  • 2 eggs
  • 1 tbsp Cell Squared Liver Powder (they’ll never know!)
  • Careme All Butter Puff Pastry

Method:

  1. Preheat oven to 180°C and line a baking tray.
  2. In a large bowl, mix all ingredients (except the pastry) until well combined.
  3. Cut Careme All Butter Puff Pastry into strips, spoon mixture along one edge, then roll tightly.
  4. Slice into smaller rolls, place on the tray, and bake for 25-30 minutes or until golden.
  5. Serve warm or pack for a nutrient-packed lunchbox treat!



No-Sulphur Apricot Bliss Balls

Soft, naturally sweet & packed with collagen for an extra boost!

Ingredients:

  • 190g sulphur-free dried apricots (avoid orange ones – only use natural, dark apricots!)
  • 70g rolled oats
  • 20g desiccated coconut
  • 1 tbsp chia seeds
  • 2 tbsp melted coconut oil
  • 2 tbsp rice malt syrup or honey
  • ½ cup collagen powder

Method:

  1. Pulse sulphur-free apricots in a food processor for a few seconds until roughly chopped.
  2. Add the remaining ingredients and blend until the mixture comes together.
  3. Roll into small balls, then refrigerate until firm.
  4. Store in an airtight container for an easy, nutrient-packed snack!



Banana & Ricotta Muffins

Fluffy, cinnamon-spiced & naturally sweetened!

Ingredients:

  • 1 ½ cups (240g) buckwheat flour
  • ½ cup coconut sugar
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 1 cup (260g) mashed ripe banana (~3 bananas)
  • 2 eggs
  • ½ cup (140g) Greek yoghurt
  • ¼ cup (60ml) olive oil or coconut oil
  • ⅓ cup (80ml) maple syrup (plus extra for brushing)
  • 2 tsp vanilla extract
  • 1 banana, extra, peeled & halved lengthways
  • Bonus addition: ½ cup fresh ricotta

Method:

  1. Preheat oven to 160°C and line muffin trays (or a loaf tin) with baking paper.
  2. In a large bowl, whisk together dry ingredients.
  3. Stir in wet ingredients until just combined.
  4. Spoon mixture into tins and place banana slices on top.
  5. Bake muffins for 20-25 minutes (or a loaf for 1 hour+).
  6. While warm, brush with extra maple syrup for a touch of natural sweetness.



Crispy Nori Snack Sheets

A simple, savoury, and crunchy homemade snack!

Ingredients:

  • 1 packet yaki nori sheets
  • 1 tbsp olive oil
  • 1 tsp Celtic salt

Method:

  1. Preheat oven to 150°C and line a baking tray.
  2. Lightly brush nori sheets with olive oil and sprinkle with Celtic salt.
  3. Stack sheets on top of each other (rough side down) and press firmly.
  4. Place on a baking tray, cover with baking paper, and weigh down with another tray.
  5. Bake for 10-15 minutes until crisp.
  6. Cut into bite-sized squares & enjoy!

Storage Tip: Keep in an airtight container with a moisture absorber to maintain crunch.
