One-Pan Chicken Drumsticks and Rice
Ingredients
• Chicken drumsticks – 6-8 (or substitute with chicken thighs or maryland)
• Uncooked rice – 1 1/2 cups basmati or long grain rice
• Butter – 2 tablespoons
• Onion – 1 medium, finely chopped
• Paprika – 1 teaspoon
• Parsley – 1 teaspoon (plus extra for garnish)
• Italian seasoning – 1 teaspoon
• Thyme – 1/2 teaspoon
• Garlic - 2 cloves
• Black pepper – 1/2 teaspoon
• Bouillon cube/Stock cube – 1, crushed
• Oil – 2 tablespoons olive oil or Ghee
• Salt – to taste
• Chicken broth – 3 cups (or use water with a chicken stock powder)
Instructions
1. Mix the Seasoning: In a small bowl, mix the paprika, black pepper, parsley, Italian seasoning, thyme, crushed bouillon cube, and a pinch of salt.
2. Season the Chicken: Pat the drumsticks dry, sprinkle with half the seasoning mix, and rub until coated. Set aside.
3. Prepare the Rice: Rinse the rice with warm water 3-4 times until the water runs clear. Drain and set aside.
4. Brown the Chicken: Heat oil in a large, deep pan over medium heat. Add the drumsticks and cook for 2-3 minutes per side until golden brown. Remove from the pan and set aside.
5. Cook the Onions, garlic and Rice: In the same pan, add chopped onions and butter. Sauté until onions are soft. Add the garlic until fragrant add the remaining seasoning and the washed rice, stirring to coat the rice in the flavors.
6. Add Broth and Chicken: Pour in the chicken broth (or water with a stock pot) and add a pinch of salt. Stir, then arrange the browned drumsticks on top of the rice.
7. Cook Everything Together: Cover the pan, reduce to low heat, and let it cook for 25 minutes or until the liquid is absorbed and the rice is tender.
8. Finish and Garnish: Remove the chicken, fluff the rice with a fork, and arrange the chicken back on top. Garnish with fresh parsley.
