Ingredients:
- 1/2 cup Coconut Oil
- 1/2 cup Maple Syrup
- 3 BIG tbsp Nut Butter (peanut butter is a favourite)
- 1/2 cup Desiccated Coconut
- 1/2 cup Cacao Powder
- 1/2 - 3/4 cup Chopped Nuts and Fruit of choice (Hazelnut, Pistachio, Macadamia mix is delicious, and dried apricots work beautifully)
- Coconut Flakes and Goji Berries to sprinkle on top
Method:
-
Melt the base ingredients: In a small saucepan over low heat, combine the coconut oil, maple syrup, and nut butter. Stir gently until everything is melted and smooth. Make sure the mixture doesn't boil—just heat it until it’s combined and silky.
-
Add the dry ingredients: Once melted, remove the saucepan from the heat and stir in the desiccated coconut and cacao powder. Mix until fully combined and there are no lumps of cacao. Next, fold in the chopped nuts and dried fruit, making sure they are evenly distributed throughout the mixture.
-
Prepare to set: Pour the chocolate mixture into a lined baking dish and spread it out evenly with a spatula. The thickness is up to you, but around 1-2 cm works well.
-
Top and freeze: Sprinkle the top with coconut flakes and goji berries for an extra burst of flavour and texture. Place the baking dish in the freezer and let it set for 3-5 hours, or until completely firm.
-
Cut and store: Once the chocolate has set, remove it from the freezer and cut it into bite-sized pieces. Store the raw chocolate in an airtight container in the freezer for a ready-to-go treat whenever you need it!
