Banana Oat Muffins
Ingredients:
- 1 cup (250g) mashed ripe bananas (about 2-3 bananas)
- ⅓ cup (75g) melted coconut oil or butter
- ½ cup (100g) brown sugar or coconut sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups (180g) wholemeal flour
- 1 cup (90g) rolled oats
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp sea salt
- ½ cup (90g) dark chocolate chips (optional)
Instructions:

Preheat Oven: Preheat to 180°C (160°C fan-forced). Line a muffin tin with paper cases or lightly grease.

Mix Wet Ingredients: In a bowl, combine mashed bananas, melted coconut oil, sugar, eggs, and vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together wholemeal flour, rolled oats, baking powder, baking soda, and salt.

Mix Together: Fold the dry ingredients into the wet mixture until just combined. If using, gently stir in chocolate chips.

Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full.

Bake: Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.

Cool: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
