Magnesium-Rich Banana Oat Muffins

These moist and delicious banana oat muffins are perfect for a sweet treat, packed with rich banana flavour and chocolatey goodness.

Banana Oat Muffins

Ingredients:

  • 1 cup (250g) mashed ripe bananas (about 2-3 bananas)
  • ⅓ cup (75g) melted coconut oil or butter
  • ½ cup (100g) brown sugar or coconut sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (180g) wholemeal flour
  • 1 cup (90g) rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup (90g) dark chocolate chips (optional)

Instructions:

  1. Preheat Oven: Preheat to 180°C (160°C fan-forced). Line a muffin tin with paper cases or lightly grease.

  2. Mix Wet Ingredients: In a bowl, combine mashed bananas, melted coconut oil, sugar, eggs, and vanilla extract.

  3. Combine Dry Ingredients: In another bowl, whisk together wholemeal flour, rolled oats, baking powder, baking soda, and salt.

  4. Mix Together: Fold the dry ingredients into the wet mixture until just combined. If using, gently stir in chocolate chips.

  5. Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full.

  6. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.

  7. Cool: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
