Ingredients
For the Salad:
- 1 can chickpeas (400g, drained and rinsed)
- 1 cucumber (about 200g, diced)
- 200g cherry tomatoes (halved)
- 1 small red onion (about 100g, thinly sliced)
- 1 handful fresh parsley (about 20g, chopped)
- 1 handful fresh mint (about 20g, chopped)
For the Lemon Tahini Dressing:
- 3 tbsp tahini
- 1 lemon (juice and zest)
- 2 tbsp olive oil
- 1 garlic clove (minced)
- 1 tsp ground cumin
- Salt and pepper (to taste)
- 2-3 tbsp water (to thin the dressing, as needed)

Prepare the Salad:
- Drain and rinse the chickpeas, then place them in a large mixing bowl.
- Dice the cucumber and halve the cherry tomatoes. Add them to the bowl with the chickpeas.
- Thinly slice the red onion and chop the parsley and mint. Add these to the bowl as well.

Make the Lemon Tahini Dressing:
- In a small bowl, combine the tahini, lemon juice, and lemon zest.
- Add the olive oil, minced garlic, and ground cumin. Mix well.
- Gradually add water, one tablespoon at a time, until you reach your desired dressing consistency. It should be pourable but not too runny.
- Season with salt and pepper to taste.

Assemble the Salad:
- Pour the lemon tahini dressing over the chickpea and vegetable mixture.
- Toss everything together until the salad is well coated with the dressing.

Serve and Enjoy:
- Transfer the salad to a serving bowl or plate and enjoy immediately. This salad is perfect on its own or as a side to your favourite dish.
