Ingredients:
- 2 x Bananas
- 1/2 - 3/4 cup Cassava Flour (depending on how you like them)
- 1/2 tsp Baking Soda
- 1 tsp Vanilla Essence
- 5 medium Eggs
- 4 Tbsp Collagen

Blend the ingredients: Place the bananas, cassava flour, baking soda, vanilla essence, eggs, and collagen into a bowl. Blend until the mixture becomes smooth and free of lumps. If the batter is too thick, adjust with a bit more cassava flour to suit your preference.

Heat your pan: Set a non-stick pan over medium heat and add a little butter or oil. Allow the butter to melt and sizzle gently, signalling it's ready for the batter.

Cook the pancakes: Pour about ¼ cup of the batter per pancake into the pan. Cook for 2-3 minutes, or until small bubbles form on the surface and the edges look set. Flip the pancake carefully and cook for another 1-2 minutes on the other side until it's golden and cooked through.

Serve and enjoy: Once cooked, stack the pancakes and serve with your kids' favourite toppings – think fresh fruit, a drizzle of honey or maple syrup, or a sprinkle of nuts. These pancakes are sure to become a family favourite!
